Ingredients

  • 6 cups yellow squash sliced
  • 1 small onion chopped
  • 1 cup cheddar cheese shredded
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 egg beaten
  • 1 cup buttery crackers crushed
  • 4 tablespoons butter melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter for cooking

Instructions

Prepare the Oven

  • Preheat the oven to 350°F. Grease a baking dish lightly with butter or cooking spray before starting.

Cook the Squash

  • Place sliced squash and onions into a skillet. Cook with butter until soft and tender, about ten minutes.

Drain Extra Liquid

  • Remove squash mixture from heat carefully. Drain extra liquid completely to keep the casserole creamy and thick.

Prepare the Filling

  • Place cooked squash mixture into a large bowl. Let it cool slightly before adding creamy ingredients.

Add Cheese and Sour Cream

  • Mix cheddar cheese, sour cream, mayonnaise and beaten egg into the squash mixture until fully combined and creamy.

Add Seasonings

  • Sprinkle salt and black pepper into the bowl. Stir gently so every bite becomes flavorful and well seasoned.

Prepare the Topping

  • Combine crushed buttery crackers with melted butter inside a small bowl. Mix until crumbs become evenly coated.

Fill the Baking Dish

  • Spread the squash mixture evenly inside the prepared baking dish using a spoon or spatula carefully.

Add the Cracker Topping

  • Sprinkle buttery cracker mixture evenly across the casserole top. Cover every corner for crispy texture after baking.

Bake the Casserole

  • Place casserole into the oven carefully. Bake for thirty-five minutes until golden brown and bubbling around edges.

Cool Slightly

  • Remove casserole from the oven safely. Let it rest five minutes before serving for easier slicing and serving.

Serve and Enjoy

  • Serve warm beside your favorite meals. Enjoy the creamy squash filling and crispy buttery topping together.

Notes

  • Drain squash well to avoid watery casserole.

  • Use Greek yogurt instead of sour cream.
  • Bake until golden and bubbly.
