  • pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 carrots sliced
  • 2 celery stalks chopped
  • 3 potatoes diced
  • 1 can diced tomatoes
  • 6 cups beef broth
  • 1 cup green beans
  • 1 cup corn
  • 1 cup peas
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions
 

Brown the beef

  • Heat olive oil in a large pot. Brown the beef pieces until nicely seared on all sides.

Cook the vegetables

  • Add onion, carrots, celery and garlic. Cook until slightly softened and fragrant.

Add potatoes
